Now open in Amsterdam: Chez Chloé

A sleek, sophisticated bistro has opened on the Overtoom — complete with an impressive wine cellar display.

Owner Matthijs van Stapele is inspired by the Parisian and London restaurants where Art Deco adds character and elegance, and he fully embraced that style here. The space is filled with natural light, grand chandeliers, and a stunning bar. His other passion is wine, which is why the centerpiece of the restaurant is a gigantic climate-controlled wine cabinet.

And the name? Van Stapele explains: “I just came up with it randomly. I think Chloé is a beautiful name, and from a practical perspective, there wasn’t a single restaurant called Chloé anywhere in the Netherlands. And of course, Chez fits perfectly with Chloé.”

The chef has created a menu that strikes a balance between classic French cuisine and dishes that are a little more adventurous—while remaining unmistakably French. Think oysters with strawberry vinaigrette, sweetbreads with lamb loin, or bavette tartare served with a porcini mushroom sauce, black radish, and seaweed.
